
Winemaking
Basic instinct, patience and sensitivity are required for winemaking. These virtues accompany both the traditional and the modern aspects of winemaking. The red wines undergo a modern fermentation in stainless steel vats and thereafter they complete their maturing in very old wooden barrels. Hence the maturing of the best wines is in a 225l barrel (barrique).
After a gentle processing and under our strict control, the grapes evolve into wine. We simply guide the procedure and when necessary give a little help.
